I had Axoa at l'Ami Jean in Paris last year. Yummy!

I had a delicious version of axoa made with tuna instead of the usual veal at a gastronomic society in San Sebastián last summer. The cook (one of the members of the "brotherhood") gave me the recipe that I have yet to try.
