Pour moi le meilleur gâteau basque est celui de la maison Péreuil, à Saint Pée sur Nivelle... un passage obligé au pays basque.

Ingrid - Thanks for the tip! Will have to try it next time...

Melinda - Gâteau basque is made with top and bottom layers of pâte sablée, and filled either with black cherry jam (my favorite) or here, crème pâtissière (a type of custard).
