Lingots d'huître en eau de mer, cappuccino de nori et mousse de coriandre

Oyster ingots in sea water, nori cappuccino and cilantro mousse. La Famille, 41 rue des Trois-Frères in the 18th.

I keep wondering--how do you eat this? The oysters are frozen in sea water cubes, no? Do you chip away at it or wait for it to melt or what? Seems to me it could be very messy. Looks delicious though.

Salmonista - The oysters are (thankfully) not frozen, but rather trapped in a sea water jelly, so they're at room temperature!
