Bar sauvage, bisque d'étrilles

Wild sea bass in crab bisque. L'Ebauchoir, 43 rue de Cîteaux in the 12th (01 43 42 49 31). The fish was cooked well, but the bisque was way oversalted.

FYI - I have heard that this species is endangered. I believe some chefs have stopped offering it.
